HOTA, Home of the Arts is set to bring together two of the region's most celebrated culinary talents this September, as Palette Restaurant welcomes renowned chef and restaurateur Ben Devlin, of Pipit in Pottsville.
The exclusive one-night dining experience will see Palette’s Executive Chef Dayan Hartill-Law and Devlin unite their shared passion for seasonal ingredients, sustainable producers and hyper-local cuisine.
Raised in Byron Bay, Devlin has built a reputation for championing hyper-local cuisine, sustainable seafood and wood-fired cooking. His career has included formative roles at internationally acclaimed restaurants including two-Michelin-starred Noma in Copenhagen, Esquire in Brisbane and Paper Daisy at Halcyon House, shaping a produce-driven philosophy grounded in seasonality, sustainability and a deep connection to place.
Taking place on 9 September, the event will celebrate the extraordinary produce of the Gold Coast and Northern Rivers while showcasing the rich diversity of the region's food culture.
The experience will begin outdoors around Palette's custom-built fire pit, before guests will experience in an intimate conversation with Hartill-Law and Devlin, offering insights into their culinary philosophies, regional sourcing and the producers who inspire their menus.
Guests will then experience an exclusive six-course menu, celebrating ingredients sourced from some of the Gold Coast and Northern Rivers' most respected farmers, fishermen and artisan producers. With each course reflecting the chefs' commitment to showcasing the remarkable quality of local produce.
For those looking to take their journey to new heights the evening will begin on Level 5 of the HOTA Gallery with a private Gyotaku masterclass led by Devlin, introducing the traditional Japanese art of fish printing using a Rocky Point Aquaculture grouper. Following the workshop, guests will descend via HOTA's signature Art Lift, arriving directly into the heart of Palette's kitchen for an exclusive behind-the-scenes experience.
Executive Chef Dayan Hartill-Law said the collaboration reflects HOTA’s commitment to presenting world-class culinary experiences.
"HOTA is a place where creativity takes many forms, and we see food as another creative medium and an important part of that story. Coming together with Pipit for this exclusive collaboration celebrates the extraordinary producers and ingredients of our shared backyards while creating a truly memorable experience for our guests."
Executive Chef and Pipit owner Ben Devlin said collaborating with Palette was a natural opportunity to celebrate both Chef's shared food culture.
"We're thrilled to bring Pipit's hyper-local philosophy and the art of Gyotaku fish printing to HOTA for this Queensland-exclusive experience. It marks the first time we've shared this unique tradition in Queensland, creating an opportunity to celebrate the incredible produce, producers and stories that connect the Northern Rivers and the Gold Coast. These neighbouring regions share an extraordinary food culture, and we're excited to showcase the ingredients and people that make our corner of Australia so special."
More than a dinner, the one-night-only event offers guests an immersive journey through fire, flavour, conversation and craftsmanship, highlighting the people, produce and stories that continue to shape Australia's most exciting culinary regions.
